Adam and I got really into Thai food a few years ago. We love the spices and all the vegetables! Our favorite Thai restaurant we've been to in Utah is Thai Siam in Draper.
Their menu has a green square with a V in it next to the items that can be made vegan. This only applies to the menu at the restaurant, the one online does not have this information. There aren't very many items with the V next to it. The ones that do are Grilled Thai Salad, Steamed Veggies, Steamed Noodles, Sticky Rice, Sweet Sticky Rice, Steamed Rice, Peanut Sauce, Gang Ga Ree Yellow Curry, Pad Pra Ram, Pad Khing Ginger Stir Fry, and Pad Preaw Wan Sweet and Sour Sir Fry.

We love spring rolls, but they don't have a V next to them, so we asked and they're also able to make the Fresh Spring Roll vegan! You can get it with tofu or just veggies. It comes with 3 sauces, but only 2 are vegan. The peanut sauce is so delicious. It's our favorite Thai sauce we've ever had and it was much better than we were expecting it to be. It has peanut butter and curry spices.
It's our favorite sauce with the spring rolls. Sometimes they'll bring out all 3 sauces, even though we ask for it to be made vegan, but other times they'll only bring out the vegan ones. You can always ask them if something is vegan or not if you are unsure.

The downsides with this dish are that if the restaurant is busy they don't cook the veggies for very long, and on $6 curry day (Thursday) they don't give you nearly as many veggies. So you end up with a ton of curry sauce and not enough veggies and rice to eat it with.
