The Best Vegan Sugar Cookies Ever

I've been vegan for almost 2 years now and I wish I had gone vegan sooner. I had been vegetarian since about age 5 and I thought going vegan would mean boring, flavorless food and no baked goods.

That hasn't been true at all though. I knew that sugar cookies were going to be what I missed most, but then I was able to start making them vegan-friendly!

These sugar cookies are seriously the best! They are so much fun to make for all the different holidays and they’re great to give away as gifts. Sugar Cookies Ingredients:
  • 1 cup vegan butter (I use Smart Balance)
  • 1.5 cups powdered sugar
  • 1 flax egg (1 Tbsp flaxseed meal and 2.5 Tbsp water)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2.5 cups flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
Combine butter, flax egg, vanilla and almond extract. Add sugar, flour, cream of tartar, and baking soda. Mix well. Refrigerate to chill. Roll out and cut into shapes. Bake at 375 degrees for 7 minutes. Butter Frosting Ingredients:
  • 1/2 cup vegan butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond milk (I use Almond Breeze Original)
Cream butter, powdered sugar, & vanilla extract. Add almond milk & food coloring.
Try putting them in the fridge and eating them cold. It makes them so much better!
