Christmas music plays in our home all of November and December. Our little twin babies even love listening to it. Our favorite thing to do right now is sing them Christmas songs and see how much they smile.

What I Didn't Know About C-Sections

I had my twins Milo and Violet via cesarean section at 27 weeks pregnant. Read my birth story here. It was an emergency c-section and we were totally unprepared for it to happen that day. We were so excited when we found out there was a plant-based food sandwich shop in Salt Lake City, but we kept forgetting to go. We finally did it though!

Mangos have been one of my favorite fruits for at least a decade and I can't ever get enough of them. I just love mango. Recently Adam and I had dinner at an Indian restaurant and we noticed that everyone there orders these orange/yellow drinks. We looked at the menu to see what it could be and it was a Mango Lassi. Sadly, it's not vegan because it has yogurt in it.

After looking at the menu a little more we saw that they have a vegan mango smoothie called the Soy Mango. We ordered one and loved it! The texture was so fun and we loved the mango flavor from it. The big downside of the drink is that it was room temperature instead of being cold. We thought, we can make this better at home and actually have it served cold.

We just found out a few weeks ago that we're expecting twins and we recently announced it on Instagram and Facebook! I was a day short of 9 weeks when we had our first appointment that told us it was twins. We decided that it was best for us to wait a little while to announce it though.

We had fun keeping this big secret with just our immediate families. We wanted to have our 13 week appointment to confirm that everything was still going well with both babies since twins are high-risk pregnancies. We decided to post on the 14 week mark since that also meant it was the beginning of the second trimester!

Washington is a great state to find vegan food in. Peta recognized Seattle as one of the top 10 vegan friendly cities in America because there are so many vegan restaurants and bakeries. It is hard to find vegan options at a lot of places, but there are a lot here.

Here's a list of our top 6 places in Washington to find vegan desserts.

1. Mighty O’s Donuts

Mighty O’s has all kinds of different donuts. Everything here is vegan! Most of their donuts are cake based, but some are yeast raised. They also have mini donuts and bear claws. Our absolute favorite one to get is the maple bar. It’s a raised donut with a maple frosting on it that has a great flavor without being too strong.

You have to go early to get these though since they don’t make a lot of them and they sell out quickly. Our favorite cake donuts are lemon poppy seed and nutty french toast. Mighty O’s has three locations in the Seattle area. They’re located in Green Lake, Ballard, and Capitol Hill. Donuts range from $1.85 to $3.25 depending on how many toppings and what kind of dough base it has. They also have a lot of coffee options.



2. The Cookie Counter

The Cookie Counter in Seattle is located in the beautiful Green Lake area. All the goodies in this bakery are vegan! They have a lot of ice cream, coffee, and baked goods. The baked items they have change a lot. Our favorites are the brownies, strawberry popsters, and peanut butter cookies. They also have blondies and other cookie flavors. The prices are pretty good ($2-4), but it can definitely add up if you get a few things.

3. Sugar Plum

Sugar Plum is a cute little non-dairy ice cream shop in the Capitol Hill neighborhood of Seattle. It is owned by Plum Bistro, which is a vegan restaurant close by. Their soft-serve ice creams are so good! They change the flavors frequently, so it is fun to try a lot of different ones. They make it with different non-dairy milks, like almond, soy, oat milk, and more.

Our favorite flavor we’ve ever had was mixed berry with oat milk. We also love the almond milk chocolate flavor. They also have a few baked goods, but those change a lot and aren’t as good as the ice cream. The prices at Sugar Plum are good, it’s about $2-3 for an ice cream cone with sprinkles.

4. Jodee’s Desserts


Jodee’s Desserts is known for their vegan cheesecakes. They have so many fun flavors of them, and they also have some other desserts, like cookies and smoothies. Everything here is vegan, gluten free, paleo, and ketogenic. Our favorite dessert we’ve had from here is the Key lime cheesecake.

It has a very strong lime flavor and an extremely smooth, creamy texture. A slice of cheesecake costs $6.95-7.95 depending on the flavor, and smoothies are $7.95-10.95. Jodee’s is on the East side of Green Lake and is within walking distance to the lake.

5. Spotted Cow


Not everything at the Spotted Cow is vegan, but there are a few good vegan options. This is a hip place that serves coffee, baked goods, gelato, and sorbet. Their sorbet is vegan. They usually have about 5 different flavors of sorbet at a time.

You can taste test these to make sure you like the flavors first. Our favorite one so far has been blackberry. It’s not tart like some other blackberry products and it has a very smooth texture. The raspberry is also really good. Spotted Cow is located in the town center in Mill Creek, WA, which is about 30 minutes north of Seattle.

6. Cinnamon Works


Cinnamon Works bakery is located in Pike Place Market in downtown Seattle, which is a huge tourist spot. Not all their baked goods are vegan, but so many of them are. They also have a lot of gluten free options. The line here can be long on a busy day, but it is worth the wait. They have a lot of vegan cookies and muffins, but the best thing they have is the vegan cinnamon rolls. They are really big and have a maple icing on top that is delicious and so flavorful. They are kind of expensive though at $5 each.

Beyond Meat Tacos Coming To Del Taco

This is an exciting time to be a vegan. Fast food chains are seeing the vegan demand. Last month Panda Express rolled out vegan chow mein and eggplant tofu.

Another win for vegans has happened! Del Taco has announced that they will serve Beyond Meat in their tacos by the end of this April! 

This fake meat will be in two menu items - Beyond Taco and Beyond Avocado Taco.




Don't these new tacos look delicious? The avocado has got me salivating. haha

Del Taco has a page where you can sign up to be alerted the second these vegan options become available.



What else is vegan at Del Taco?

There are lots of vegan items you can order at this restaurant. They are:

Panda Express Will Now Have Vegan Options

Yesterday it was announced that Panda Express will join the ranks of fast food places that have vegan options. Big thanks to Vegan Outreach for making this possible.

What's vegan at Panda Express?

The two vegan dishes at Panda Express will be Eggplant Tofu and Chow Mein. They were previously not vegan because they contained chicken broth and animal-based seasonings.

You'll be able to order these by the end of February 2019 at any of their 2,000 locations.

The last couple of years have been good to us vegans. McDonald's made their Apple Pie vegan in Canada (source). Taco Bell is set to release new vegan menu items this year (source). Carl's Jr rolled out the Beyond Meat Burger (source).


I'm very excited to see what other restaurants will do. Smart companies are watching the vegan space. In fact, "Sales of vegan foods in America in the year to June 2018 rose ten times faster than food sales as a whole.” (source)

If you're anything like me, I get super excited whenever I see vegan celebs on tv. There are much more than I thought. Here's a list of the famous vegan celebrities I found. As time goes on, I'll update this post to include more!

1. Madelaine Petsch

Madelaine is a vegan actress. She is well-known for her role as Cheryl Blossom on Riverdale. She was raised vegetarian and became vegan when she was 14. She said "Being vegan keeps my body fueled and running smoothly". She did a campaign with Peta where she wore a dress made entirely of bok choy.

2. Ariana Grande

Ariana Grande is a famous vegan musician

Ariana Grande is a very famous singer who used to be an actress on Nickelodeon. She became vegan in 2013 because of her love for animals. She said she even loves animals more than people. She believes that a vegan diet can extend your life and make you a happier person. She has also spoken out against SeaWorld in defense of the animals there.



3. Miley Cyrus

Miley Cyrus is a vegan actress.

Miley is a famous singer and actress. She started out on Disney Channel's Hannah Montana, then became a singer and starred in movies. Miley has been vegan since 2014 because she loves animals. What prompted her to go vegan was when her dog was killed by coyotes. She has a tattoo of the Vegan Society's sunflower logo and encourages veganism from what she wears to what she eats.

4. Liam Hemsworth


Liam is an actor who is also married to Miley Cyrus. He went vegan in 2015 and has been an advocate for veganism. He was sick on the set of The Hunger Games and Woody Harrelson suggested he eat raw vegetables. This was what sparked him going vegan. He has said that since going vegan he has more energy, sleeps better, and has more endurance for working out.

5. Benedict Cumberbatch

Benedict is an actor from London. He has been in the Avengers movies and was also the voice of the Grinch in the newest Grinch movie. He has spoken in many interviews about his plant-based diet and about being cruelty-free. In 2016 he was on the cover of British GQ wearing vegan boots and a vegan suit.

6. Peter Dinklage


Peter is an actor who has been in X-Men and Game of Thrones. In the show, Game of Thrones, his character is seen eating meat, but when they film those scenes, he really has tofu or other meat substitutes that look like meat. Before going vegan, he was a vegetarian for 15 years.

7. Mayim Bialik


Mayim is an actress who is well-known as Amy Farrah Fowler on The Big Bang Theory. She has worked with PETA to help educate people that going vegan is healthy and saves animals. She has a vegan cookbook called Mayim's Vegan Table.

8. Woody Harrelson

Woody Harrelson is a famous raw vegan.

Woody is not only vegan, but a raw vegan. He also does not eat flour or sugar. In 2012 he was PETA's Sexiest Vegetarian. He is an actor and was recently in the movie Solo: A Star Wars Story.

Chipotle Vegan Options: Ordering Vegan at Chipotle

Chipotle has been a long-time favorite restaurant for Adam and I. Mexican restaurants are usually pretty easy to find vegan food at, and Chipotle definitely meets this. They have tons of fresh options that are vegan and you can make so many different combinations. When I became vegan I did some research and found that there are tons of Chipotle vegan options.

They have burritos, bowls, tacos, and salads. The burrito comes with a large flour tortilla and the tacos come with flour tortillas or crispy corn shells.

Here are all of the Chipotle vegan options available to us:

  • Flour tortillas
  • Corn tortillas
  • Crispy corn tortillas (for the crispy tacos)
  • Sofritas - The sofritas from Chipotle are vegan and contain "shredded tofu braised with chipotle chilies, roasted poblanos (mild chili peppers), and a blend of spices." Source
  • White cilantro lime rice
  • Brown cilantro lime rice
  • Black beans
  • Pinto beans
  • Fajita veggies
  • Fresh tomato salsa (mild)
  • Tomatillo red-chili salsa (hot)
  • Tomatillo green-chili salsa (medium hot)
  • Roasted chili-corn salsa (medium)
  • Romaine lettuce
  • Guacamole
  • Chips
These are the ingredients that are NOT vegan:
  • Steak
  • Carnitas
  • Chicken
  • Barbacoa

My go-to order is always a veggie burrito. Their flour tortillas are so soft and delicious, so that's why I get a burrito. Also, the burrito holds more food in it than the tacos do. I get my burrito with brown rice, tomatillo green-chili salsa, roasted chili-corn salsa, romaine lettuce, guacamole. Sometimes, the workers will get cheese and sour cream on the work station, which can get on the tortilla of my burrito.

I always look at their work station before ordering to see how clean it is. If it's just a little messy and the restaurant isn't super busy, then I ask them to wipe it down and explain that I am vegan. If it's really messy and they're crazy busy, then I get a bowl instead.

Veggie bowl at Chipotle

Personally, I think their white rice and brown rice taste very similar, so I choose to get the brown rice because it's healthier. I've never been a fan of black beans or pinto beans, but Adam loves both of them.

Their fajita veggies are a mix of bell peppers and red onions. The color of the bell peppers they have changes often. They usually have either green or red, but sometimes they also have yellow. These veggies are really good and can have a nice char on them.

You can get as many salsas as you want, which is awesome! I always get the tomatillo green-chili salsa (medium hot) and the roasted chili-corn salsa. Sometimes I also get the fresh tomato salsa, which is basically just pico de gallo. The medium hot salsa is my favorite salsa at Chipotle. It can be kind of spicy, but I other times it's not too spicy. It provides a lot of acidic flavor to your meal.

Chipotle's guacamole is so delicious! As far as I know, it's made of avocados, red onion, jalapeno peppers, and lime juice. It costs extra to add it to your meal, unless you get a veggie meal! I love that it's included in my meal.

Chipotle makes it super easy to find out what is vegan and what is not vegan at their restaurant. I wish more restaurants would make it this easy and clear. You can find out by looking at their Allergens and Special Diets page. This page also tells you if each ingredient has milk, soybeans, wheat and gluten, and sulphites. They also state that they do not use any eggs, mustard, peanuts, tree nuts, sesame, shellfish, or fish in their products.

I love that Chipotle has locations all over the United States. This makes it very easy for us to find vegan options while traveling. Sometimes it is hard to find menus and nutritional information for restaurants, so I'm glad that I can always count on Chipotle as a backup place to eat.

Thread Tank: Wifey T-Shirt

It's no surprise that I have been adding to my graphic tee collection already this year. I found a company that has really fun graphic tees, called Thread Tank. I've known about the company for a few months and just got my first t-shirt from them.

I loved so many of their t-shirts, but the one that stood out the most to me was their Wifey Cursive Women Relaxed Crew T-Shirt. I have been wanting a graphic tee that says wifey for a while, so I couldn't resist getting this one.

I love the cursive font on it and I love how big the graphic on it is. I got the color heather rogue, which is similar to a heather burgundy. The writing on it is in white. I got it in a size small, which is my normal size.

I really like the crewneck style of the shirt I got and the relaxed fit is very comfortable. It's definitely the style of t-shirt that I prefer to wear. I don't like shirts that are too tight, so it's perfect. They have a lot of other relaxed crew neck shirts.

My other favorite's on their site are their Girl Power shirt, Paper Airplanes shirt, and Done Adulting Today Shirt. They all have really fun designs and I love the colors that they come in.

I've been married to Adam for 5 years (6 in May!) and can't believe I've never had a cute shirt that says Wifey. I'm super excited to wear this shirt a lot. They also have a shirt that says Hubby on it. How fun would it be to match your spouse and wear these? I know I'd love to do that! I think it's really cool that Thread Tank's shirts are designed and printed in the United States.

Her recipes are very family-friendly. Megan, her husband, and son are all vegan. She is a foodie and an animal advocate and has been for a very long time. She also shares her party tips from her fun looking events.

7. Jessi Gertsch

Jessi Gertsch is the vegan vlogger behind The Bonus Bunch on YouTube.

Jessi and her husband are vegan vloggers on YouTube. They each have 3 kids and have formed their own blended family. They vlog about their family and how they run their household. They also share videos about making vegan things, like eggs and flatbread.

Jord Watches: Stylish Wood Watches

In the last year I've started wearing more accessories than I used to. They can be really fun to add to outfits to have a pop or color. I haven't been big into watches because I think it's hard to find ones that are unique and fit my style. I just got the coolest watch to add to my collection of accessories though! I love unique, eye-catching watches and Jord is perfect for this.

They have a lot of wood watches in different colors and styles. They have styles for men and women. I really believe they have a watch to fit everyone's personality and style. One of the things I love about their watches is that they are standout accessories. They're not ordinary pieces that you could find from anywhere.

The watch that I got from Jord is their Frankie Purpleheart & Plum watch. I cannot get enough of the color of it! The wood band is a deep purple/pink color and the watch face is a similar color, but a little brighter. This color goes really well with the clothing I wear. I love how feminine the color is and I think the watch has great craftsmanship. I can tell that this is a watch that will last me for many years because of how great the quality is.

The wood on my watch is Jord's Purpleheart Wood. It is sourced from the Solomon Islands and is naturally the deep purple color that you see in my pictures. The grain has straight lines. The finish on it is so beautiful and long lasting.

Their watches come in really cool boxes. The one I got was really fun to open. The watch was also around a really cute pillow that looked like it was made from burlap material. Jord is pronounced Yode. It is like Yoda, but without the A sound. They use natural and reclaimed materials, which is something that is important to me. They come out with new, sophisticated designs often. The company is based out of St. Louis, MO.

Calluna Market: The Shop For Relatable Tees

I got another graphic tee, but this one is unlike any other that I've gotten before. The company I got it from is Calluna Market. They have the most relatable graphic tees that I've seen! They have the funniest saying on them. When I see most of them I think "yep, that describes me"!

They have a bunch of graphic tees with sayings about Target and those were my absolute favorites! Target is such a fun store to shop at and all the things these shirts said were so true.

I decided to get their Target Love Language Graphic Tee Shirt. I got it in mauve. I liked how the mauve color was somewhat similar to red (Target's color), but I didn't want red. Red's not my favorite and I don't want to get mistaken as a Target worker when I'm there.

On the shirt it says "Target is my love language" in white print. I thought that was so funny and so relatable! The shirt is unisex sizing. For a tighter fit go with a size down. I kept my normal size because I prefer a looser fit for my tees. The shirt fit exactly how I wanted it to.

I was so excited to wear this shirt on my latest shopping trip to Target with my husband. We found the Target Dog in the clothing section and just had to get a picture with it.

Calluna Market has tons of other graphic tees that are also super cute. My favorites are the Plant Lady T-Shirt since I love plants, their Hocus Pocus T-Shirt (love that movie!), and their Only A Morning Person On December 25th Shirt.

To care for their shirts, wash them inside out on cold. Don't use fabric softener or bleach and tumble dry low. This will help the shirt to not shrink and the print to not peel off.
