What To Order At CoreLife Eatery If You're a Vegan

CoreLife Eatery has been a favorite fast casual Utah restaurant of mine and my husband's since one first opened up close to us about a year and a half ago. We absolutely love salads and meals with lots of veggies, so one day we tried it knowing nothing about it. We loved it so much that we went a few more times that week and insisted that my husband's family try it too!

They have a lot of vegan options on their menu. I love when places have pre-made vegan meals on the menu and when you can build your own. CoreLife has both!

On their menu they have green bowls, grain bowls, broth bowls, power plates, warm rice bowls, kids power menu, create your own bowl, and hand crafter beverages.

The vegan menu items are very easy to spot because they have a green circle with a V in it next to them. These items are also all gluten-free. I love when restaurants make it super easy to find what is vegan. Props to CoreLife for doing this.

They have 3 premade menu items that are marked as vegan:

  • Sriracha Ginger Tofu & Ancient Grains grain bowl
  • Sriracha Ginger Roasted Tofu green bowl 
  • Shiitake Mushroom & Roasted Tofu broth bowl

On our most recent visit I tried the Sriracha Ginger Tofu & Ancient Grains grain bowl. It comes with warm quinoa, shredded kale, roasted tofu, carrots, raw beets, spicy broccoli, ginger, sriracha, and carrot chili vinaigrette dressing.

I made a few changes to my bowl to fit my preferences. I switched out the tofu and raw beets for corn and edamame. I got the dressing on the side just in case I didn't like the dressing, but I ended up loving it and mixing it in.

I thought that this bowl had a nice spice to it. It wasn't overpowering, but was definitely noticeable. My husband had a few bites of my grain bowl and also loved it.

I haven't tried CoreLife's other 2 vegan options, but I would like to soon.

The Sriracha Ginger Roasted Tofu green bowl has baby spinach, shredded kale, roasted organic tofu, spicy broccoli, carrots, ginger, sprouts, basil, sriracha, and carrot chili vinaigrette dressing.

The Shiitake Mushroom & Roasted Tofu broth bowl has vegetable broth, shiitake mushrooms, napa cabbage, shredded kale, roasted tofu, sprouts, ginger, lemongrass, and sliced almonds.

My favorite way to order is the create your own bowl option. This is perfect for me as a vegan who is somewhat picky with what I'll eat. You can get a small or large bowl. You'll choose a base, then 4 toppings, add premium ingredients, and choose a broth or dressing.

I love to order the create your own bowl with half romaine lettuce and half rice noodles. I know it sounds a little odd, but the rice noodles have a great texture and they make the dish more filling. I also get 2 scoops of corn, edamame, carrots, avocado, miso sesame ginger dressing, and tortilla strips.

The miso sesame ginger dressing is my favorite dressing I've ever had! I tried it one day and Adam and I both couldn't believe how good it was. He gets it a lot too.

Just a heads up if you order my create your own bowl, I get the regular rice noodles. The spicy ones are not vegan because they contain honey.

I think it would be really fun to create my own broth bowl soon with their vegetable broth. I'll update this post if I do!

It is so nice to have a fun salad place close by that has tons of plant-based menu options and ingredients. Also, if you're not sure if something is vegan or not, send CoreLife an email and ask. I've done this a few times and they've always responded quickly and answered all of my questions.

CoreLife Eatery has a lot of really good hand crafted beverages. I love how they don't have a soda fountain, since Adam and I don't drink traditional soda. It is really fun to try their difference drinks though. On our most recent visit I got the fresh squeezed lemonade and Adam got their cucumber basil lemonade. We both loved our drinks. We also sampled the fruit punch and thought it was really good.

They have really reasonable prices and they give you large portions. Even when I get a small bowl, I'm very full. When my husband and I go together and order vegan meals we never spend more than $20, and that's even when we add avocado to our salads. It does cost more when we order drinks though.

CoreLife has locations in 11 different states and we're so happy that Utah is one of them. The location that we go to is the Sandy, Utah one. The staff is always very nice and friendly. You can tell that they care about providing you with a delicious and healthy meal.

This restaurant was started in 2015 by Larry Wilson and a team of people who care about great tasting food that is healthy and convenient to get. Everything they serve is GMO-free, does not have high-fructose corn syrup, and does not have any artificial flavors or colors. Those are all things that are really important to Adam and I when we're choosing what to eat. We definitely prefer to go to a healthy, casual restaurant over a fast food one.
