Tortilla Republic Vegan Options: What To Get

We recently went to Southern California for a vacation with my in-laws. We spent a day in Disneyland, a day in California Adventure, then had one more day in Laguna Beach.

When Adam and I heard that we would have a day in Laguna Beach, we knew exactly where we wanted to go for lunch! A modern Mexican restaurant named Tortilla Republic.

Two years ago we went to Kauai and stayed in Poipu. There was a shopping center nearby with a bunch of restaurants, including Tortilla Republic. That was our first time ever going to this restaurant and we couldn't believe how good it was. We ate there 3 times in 4 days!
Tortilla Republic has 3 locations- Kauai, West Hollywood, CA, and Laguna Beach, CA. Something that we love about this restaurant is that they use farm-fresh, organic products when available and they don't cook with lard or processed ingredients.

When you get to your table they bring you chips and salsa, like most Mexican restaurants. These are so much better than most restaurants though! The chips are thick and salty. The salsa is probably the best we've ever had. It's spicy without being so hot that you can't eat it. It has a great tomato flavor and so many fresh ingredients.

They have many gluten free and vegan menu items. I got one of the bochas (bowls). The one I chose was the Vegetariano, which is gluten free and vegan. It's served with herb rice and black beans, then also comes with fried cauliflower, roasted peppers, grilled onions, spiced pepitas, pico de gallo, corn salsa, and tomatillo fresca. I also added some of the above mentioned salsa to mine because I was so addicted to it! It would also be really good to have them add a side of avocado or guacamole to your bowl.

This bowl was super fresh, delicious, and filling. It had a ton of flavor. My absolute favorite part of it was the fried cauliflower. It was unlike any cauliflower I've ever had. It was crispy on the outside and soft on the inside.

Next time I would love to try their Vegetariano enchiladas. To make it vegan I would have to take out the asadero and Monterey jack cheeses. That way it would come with cauliflower, chayote squash, green peas, roasted peppers, onions, and tomatillo sauce.

It would also be fun to try their guacamole sometime. What's not to love about guac? Theirs comes with avocado, serrano peppers, cilantro, white onions, tomatoes, and lime. Sounds like the perfect guacamole to me!
