We love Thai food and Pad See Ew is the first Thai dish that I ever had. I had it about 5 years ago and just loved it! The big wide rice noodles are so fun to eat and I loved the veggies that came in it. The sauce was unlike any sauce I’ve ever had on noodles and I thought it was so delicious.
The Thai restaurant I used to get it at closed down, so we decided it was time to make our own pad see ew!
This recipe only requires one pan. I love that because I hate when I make a dish and have tons of dishes to clean after.
It’s really easy and quick to make. The brand I use of wide rice noodles, aka pad see ew noodles, is Nona Lim. I like how they can just be added to the stir-fry, they don’t have to be cooked beforehand. This brand has a really good Thai noodle to use in your Thai stir fry dishes.

The noodles are so soft and really absorb the sauce well. Some of them break as you mix them around, but this isn’t a big deal to me.
The only veggie I put in mine is broccoli. I really love how broccoli soaks up sauce and it tastes so good in this recipe. You could try any veggies you want though. I’ve had zucchini, shallots, and carrots in it before, but I like to keep it simple and just do broccoli. You could switch it up for Chinese broccoli if you prefer that, or even try bok choy in yours.
I don’t like tofu, but that works in a lot of vegan recipes, so you could try it in this one.

The sauce just has 3 ingredients. Hoisin sauce, light soy sauce, and sriracha. You can change the amount of sriracha depending on how spicy you like it. We like things a little spicy, but you don’t have to put as much as we do.
I chop and cook the broccoli, then add the noodles and sauce ingredients, then just stir and mix it around till the sauce is soaked in.
This is the perfect dinner for when you don’t have a lot of time to make something, but don’t want to settle for a frozen meal.

Easy Vegan Pad See Ew Recipe
- 10 oz wide rice noodles
- 1 cup broccoli
- 1 tbsp extra virgin olive oil
- 4 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1.5 tsp Sriracha sauce
- Chop broccoli and put in pan with olive oil on medium heat
- Cook rice noodles according to package directions
- When broccoli is soft, add rice noodles, soy sauce, hoisin sauce, and Sriracha sauce to pan
- Stir and cook until the sauce is mostly soaked in
