Is there anything better than a big bowl of ramen? Adam and I don’t think so! We love going to Vegan Bowl and getting their ramen, but it’s a little far, so it’s been really hard to go there since we had our twins. We recently decided to make our own.

Ramen noodles are so comforting and we can’t get enough veggies around here. We’re getting more and more into spicy foods, but still don’t want anything super spicy. We put together this recipe and have been making it at least once a week lately. This recipe is quick, easy, and doesn’t require a lot of ingredients. It doesn’t make a crazy amount of dishes and it leftovers really well.
I prefer to make meals that have veggies incorporated into them rather than just veggies on the side, so this meal is perfect. The veggies taste so good with a little bit of char on them and with the yummy sauce combination. We top it with lime juice when we serve it. The lime juice is optional, but we feel like it really helps the flavors come together.

You can use whatever ramen noodles you want, but our favorite are these fresh noodles from Nona Lim.
The amount of Sriracha that we put makes the dish spicy, but not crazy spicy. If you don’t like spice, then you can take it out of the recipe, or just try a little bit. You can always add more to make it spicier too.
This is a very filling meal. It is vegan and dairy-free. Enjoy your yummy vegan ramen!
QUICK & DELICIOUS VEGAN RAMEN NOODLE STIR FRY RECIPE

- 10 oz ramen noodles
- 2 big carrots
- 1 small head of broccoli
- 1 shallot clove
- 1 tbsp olive oil
- 1.5 tsp Sriracha
- 6 tbsp soy sauce
- 3 tbsp hoisin sauce
- 1 lime
HOW TO COOK QUICK & DELICIOUS VEGAN RAMEN NOODLE STIR FRY RECIPE
- Cook the ramen noodles using the directions on the package.
- While the noodles are cooking, chop up the carrots, shallots, and broccoli.
- Cook the veggies in a pan with the olive oil till soft.
- When the ramen noodles are cooked, add them to the pan with the veggies.
- Add the Sriracha, soy sauce, and hoisin sauce to the pan.
- Mix and cook over medium heat until sauce has mostly absorbed.
- Top with some lime juice.
